Winemaking Process

    Harvesting Grapes

    Harvest the Niagara grapes when they are fully ripe, ideally in late summer to early fall.

    Crushing Grapes

    Crush the harvested grapes to release the juice. This can be done manually or using a grape crusher.

    Fermentation

    Transfer the crushed grapes and juice into a fermentation vessel. Add yeast and stir well. Allow the mixture to ferment at a controlled temperature for 1-2 weeks.

    Pressing

    After fermentation, press the mixture to separate the liquid from the solids. Collect the liquid in a clean container.

    Adding Sugar

    Dissolve the sugar in water and add it to the wine. This step is optional and can be adjusted based on desired sweetness.

    Aging

    Allow the wine to age in a cool, dark place for at least 6 months. This enhances the flavors and aromas.

    Bottling

    Once aged, carefully siphon the wine into clean bottles, leaving some space at the top. Seal with corks or caps.

    Store the bottles in a cool, dark place. The wine is ready to be enjoyed after at least a few weeks of bottling.
