Cool the Milk
Once heated, remove the saucepan from the heat and let the milk cool to about 110°F (43°C). You can use a kitchen thermometer to check the temperature.

In a small bowl, mix the plain yogurt with a little bit of the cooled milk to create a smooth paste. Then, whisk this mixture back into the cooled milk in the saucepan.

Cover the saucepan with a lid or a kitchen towel and place it in a warm environment (like an oven with the light on or a yogurt maker) for 6 to 12 hours, depending on how tangy you want your yogurt. The longer it incubates, the tangier it will be.

After the incubation period, check the yogurt. It should be thickened and have a tangy flavor. If it's not thick enough, let it sit for a few more hours.
