Chicken Kofte Preparation

Mix Ingredients

In a large bowl, combine the ground chicken, grated onion, minced garlic, chopped parsley, cumin powder, paprika, salt, black pepper, and olive oil. Mix until well combined.

Shape Kofte

With damp hands, take a portion of the mixture (about the size of a golf ball) and shape it into oval patties (kofte shape). Repeat until all the mixture is used.

Cook Kofte

Heat a non-stick skillet over medium heat and add a little olive oil. Cook the kofte patties for about 5-6 minutes on each side until golden brown and cooked through.

Yogurt Sauce Preparation

Combine Ingredients

In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and chopped mint. Stir well until all ingredients are combined.

Chill Sauce

Cover the yogurt sauce and let it chill in the refrigerator for at least 15 minutes for the flavors to meld.

Serving the Lunch

Prepare Plates

On serving plates, place a handful of mixed greens and a few halved cherry tomatoes.

Add Kofte

Place 2-3 cooked chicken kofte on top of the greens.

Drizzle the chilled yogurt sauce over the kofte and serve with pita bread on the side.
