Soak Chickpeas

Place dried chickpeas in a bowl and cover with water. Let them soak overnight (at least 8 hours) until they are tender.

Blend Ingredients

Drain and rinse the soaked chickpeas. In a food processor, add chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

Form Falafel Balls

Transfer the mixture to a bowl, add flour and water, and mix until combined. Form small balls (about 1 to 1.5 inches in diameter) and place them on a baking sheet.

Heat Oil

In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Falafel

Carefully drop falafel balls into the hot oil, working in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Serving

Assemble Lunch

Warm pita bread in a skillet or microwave. Place 2-3 falafel balls in each pita, add fresh vegetables, and drizzle with tahini sauce. Serve immediately.
