Preparation of Filling

    Chop the Walnuts

    Place the walnuts in a food processor and pulse until coarsely chopped. Be careful not to over-process; you want some texture.

    Mix the Filling

    In a mixing bowl, combine the chopped walnuts, sugar, and cinnamon. Mix well and set aside.

Phyllo Assembly

    Prepare the Butter

    Melt the butter in a saucepan over low heat. Once melted, remove from heat and let it cool slightly.

    Layer the Phyllo

    Preheat your oven to 350°F (175°C). Take a baking dish and brush the bottom with melted butter. Carefully lay one sheet of phyllo dough in the dish and brush it with melted butter. Repeat this process for about 8 sheets, brushing each layer with butter.

    Add Filling

    Spread a layer of the walnut filling over the phyllo layers. Add another 5 sheets of phyllo, brushing each with butter, then add another layer of filling. Repeat until all filling is used, finishing with about 8 more sheets of phyllo, brushing each with butter.

Baking

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking.

    Bake the Baklava

    Place the baklava in the preheated oven and bake for 45-50 minutes or until golden brown and crisp.

Preparing the Syrup

    Cook the Syrup

    In a saucepan, combine water, honey, and lemon juice. Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes. Remove from heat and let it cool slightly.

    Add Syrup to Baklava

    Once the baklava is baked and golden, remove it from the oven and immediately pour the cool syrup over the hot baklava. Allow it to soak for a few hours before serving.
