Brewing Instructions
- 1
Mashing the Grains
In a large brew kettle, heat 3 gallons of water to 165°F. Add the crushed grains (pale malt, crystal malt, and chocolate malt) and maintain the temperature at 150°F for 60 minutes. Stir occasionally.
- 2
Sparging
After mashing, sparge the grains with 2 gallons of hot water (170°F) to collect the wort. The total volume should be about 5 gallons.
- 3
Boiling the Wort
Bring the collected wort to a boil. Add Northern Brewer hops and boil for 60 minutes. 15 minutes before the end of the boil, add the Fuggle hops.
- 4
Cooling the Wort
After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F.
- 5
Fermentation
Transfer the cooled wort into a sanitized fermenter and pitch the yeast. Seal the fermenter with an airlock and let it ferment at around 68-72°F for 1-2 weeks.
- 6
Bottling
After fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer before bottling. Bottle the beer and cap it. Let it carbonate for another 1-2 weeks at room temperature.
