Brewing Process

    Mashing

    In a large pot, heat 5 liters of water to 68°C (155°F). Add the pale malt, crystal malt, and Carafa malt. Maintain this temperature for 60 minutes.

    Lautering

    After mashing, drain the liquid (wort) from the grains and rinse the grains with an additional 2 liters of hot water.

    Boiling

    Bring the wort to a boil. Once boiling, add 1 cup of Cascade hops and boil for 60 minutes. Add the remaining hops in the last 15 minutes of the boil.

    Cooling

    After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

    Fermentation

    Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Allow fermentation to occur at a steady temperature for 1-2 weeks.

    Bottling

    Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water, let it cool, then add it to the beer before bottling.

    Conditioning

    Bottle the beer and let it condition for another 1-2 weeks at room temperature.
