Preparation Steps

Prepare the Rice Noodles
Cook the rice noodles according to package instructions until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables
Julienne the cucumber, carrot, and red bell pepper. Set aside.

Prepare the Wraps
Fill a shallow dish with warm water. Dip a rice paper wrapper in the water for about 10-15 seconds until it becomes soft. Lay it flat on a clean surface.

Assemble the Rolls
On the bottom third of the rice paper, place a lettuce leaf, a handful of rice noodles, and a mix of the julienned vegetables. Add a few mint, cilantro, and basil leaves on top.

Roll the Summer Rolls
Fold the sides of the rice paper over the filling, then roll it tightly from the bottom up to enclose the filling. Repeat with remaining ingredients.

Make the Tahini Ponzu Sauce
In a small bowl, whisk together tahini, soy sauce, lime juice, and a little water to thin it out. Adjust seasoning to taste.

Serve the summer rolls with the tahini ponzu sauce for dipping.
