Method

Prepare the Tomato Jam

    Cook the Tomatoes

    In a saucepan over medium heat, combine cherry tomatoes, sugar, red wine vinegar, salt, and black pepper. Cook until tomatoes are soft and jam-like, about 15 minutes. Set aside.

Cook the Bacon

    Crisp the Bacon

    In a skillet, cook the bacon strips over medium heat until crispy. Remove and drain on paper towels. Crumble into pieces.

Prepare the Lemon Butter Orzo

    Cook the Orzo

    In a saucepan, bring chicken broth to a boil. Add orzo and cook until al dente, about 8-10 minutes. Drain excess liquid.

    Make the Lemon Butter Sauce

    Stir in butter, lemon juice, Parmesan cheese, salt, and black pepper. Mix until creamy and well combined.

Wilt the Spinach

    Sauté Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add spinach, salt, and pepper, cooking until wilted, about 3-4 minutes. Remove from heat.

Cook the Salmon

    Sear the Salmon

    In a skillet, heat olive oil over medium-high heat. Season salmon fillets with salt and pepper. Sear fillets for about 4-5 minutes on each side until crispy and cooked through.

Plate the Dish

    On a plate, place a serving of lemon butter orzo, top with wilted spinach, seared salmon, crumbled bacon, and a spoonful of tomato jam.
