Method

Cooking the Chicken Thighs

    Prepare Chicken

    Season chicken thighs with garlic powder, paprika, salt, and black pepper.

    Sear Chicken

    In a skillet, heat olive oil over medium-high heat. Add chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes until cooked through.

Cooking the Marble Potatoes & Caramelized Red Onion

    Boil Potatoes

    Boil marble potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

    Caramelize Onion

    In the same skillet, melt butter over medium heat. Add sliced red onion and cook until caramelized, about 10 minutes. Season with salt and pepper.

    Combine

    Add the boiled marble potatoes to the skillet with caramelized onions and toss gently.

Making the Corn Puree

    Blend Corn

    In a saucepan, combine frozen corn, heavy cream, salt, and pepper. Cook over medium heat until heated through, about 5 minutes.

    Puree

    Transfer mixture to a blender and puree until smooth. Set aside.

Preparing the Mirepoix Salad

    Mix Vegetables

    In a bowl, combine carrots, celery, and onion.

    Dress Salad

    Drizzle with olive oil and apple cider vinegar, then season with salt and pepper. Toss to combine.
