Prepare the Filling
In a bowl, combine the Duroc pork, chopped Napa cabbage, minced ginger, minced garlic, green onions, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Dumplings
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the pork mixture into the center of the wrapper. Moisten the edges with water, fold the wrapper over to create a triangle, and press to seal. Repeat with the remaining wrappers and filling.

Cook the Dumplings
Bring a large pot of water to a boil. Add the dumplings in batches and cook for about 4-5 minutes, or until they float to the surface and are cooked through. Remove with a slotted spoon and drain.

Serve
Serve the dumplings hot with sesame tahini and ponzu sauce for dipping.
