Lemon Thyme Puree

Grilled Lemon

Method

Prepare Pork Chops

  1. 1

    Season and Dredge

Season the pork chops with salt and pepper. Set up a dredging station with flour, beaten eggs mixed with milk, and breadcrumbs. Dredge each chop in flour, dip in the egg mixture, and coat with breadcrumbs.

  2. 2

    Fry the Chops

Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded pork chops and fry for about 5-7 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Make Brussels Sprout Slaw

  1. 3

    Prepare the Slaw

Shred the Brussels sprouts thinly. In a bowl, whisk together whole grain mustard, apple cider vinegar, honey, olive oil, salt, and pepper. Toss the shredded Brussels sprouts in the dressing until well coated.

Prepare Lemon Thyme Puree

  1. 4

    Blend Ingredients

In a blender, combine fresh thyme, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth and adjust seasoning as needed.

Grill Lemon

  1. 5

    Grill Lemons

Slice the lemons in half and grill them cut-side down on medium heat for about 3-4 minutes until they have grill marks and are slightly softened.
