Method

Preparing the Beef Bourguignon

    Sear the Beef

    In a large Dutch oven, heat olive oil over medium-high heat. Season the beef with salt and pepper, then sear in batches until browned on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add pearl onions, carrots, and mushrooms. Sauté until softened, about 5-7 minutes.

    Add Garlic and Herbs

    Add minced garlic, thyme, and bay leaves to the pot, stirring for 1 minute until fragrant.

    Deglaze and Simmer

    Pour in the red wine and scrape the bottom of the pot. Bring to a boil, then reduce to a simmer. Return the beef to the pot and add beef broth. Cover and simmer on low for 2-3 hours until the beef is tender.

Making the Potato Croquettes

    Prepare Potatoes

    Boil the cubed potatoes until tender, about 15 minutes. Drain and mash with butter, salt, and pepper. Allow to cool slightly.

    Combine with Cheese

    Mix in the grated Appenzeller cheese and beaten egg until well combined.

    Form Croquettes

    Shape the potato mixture into small logs or patties. Roll in breadcrumbs to coat.

    Fry or Bake

    Heat oil in a skillet and fry the croquettes until golden brown on all sides, or bake at 400°F (200°C) for 20-25 minutes.
