Prepare the Duck
Season the duck breasts with salt and pepper. In a skillet, heat sesame oil over medium-high heat. Sear the duck breasts, skin side down, for about 5 minutes, or until the skin is golden brown. Flip and cook for another 3-4 minutes for medium-rare. Remove from heat and let rest for 10 minutes.

Make the Turmeric Ponzu
In a small bowl, whisk together turmeric powder, soy sauce, and rice vinegar. Set aside.

Prepare the Chickpea and Persimmon Salad
In a bowl, mix together the chickpeas, sliced persimmons, chopped green onions, and chopped cilantro. Drizzle with a little sesame oil and season with salt to taste.

Slice and Serve
Slice the rested duck breast thinly against the grain. Arrange the slices on a plate, drizzle with the turmeric ponzu, and serve with the chickpea and persimmon salad on the side.
