    Make the Dough

    In a mixing bowl, combine the flour and salt. Gradually add water while mixing until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In another bowl, mix the ground pork, soy sauce, sesame oil, chopped scallions, minced garlic, and ginger until well combined.

    Form the Potstickers

    Roll the rested dough into a log and cut it into small pieces. Roll each piece into a circle about 3 inches in diameter. Place a tablespoon of the filling in the center of each circle, fold in half, and pinch the edges to seal.

    Cook the Potstickers

    Heat a skillet over medium heat and add a little oil. Place the potstickers in the skillet and cook until the bottoms are golden brown (about 2-3 minutes). Add a splash of water (around 1/4 cup), cover the skillet, and let them steam for 5-7 minutes.

    Serve

    Serve hot with additional soy sauce for dipping.
