Wagyu Beef with Apricot Yakitori Glaze

    Prepare the Yakitori Glaze

    In a small saucepan over medium heat, combine apricot jam, soy sauce, mirin, rice vinegar, sesame oil, minced garlic, and grated ginger. Stir until the mixture is well combined and begins to simmer. Reduce heat and let it cook for about 5-7 minutes until thickened slightly. Remove from heat and set aside.

    Prepare the Wagyu Beef

    Season the Wagyu beef steaks with salt and black pepper on both sides. Let them sit at room temperature for about 15 minutes before cooking.

    Cook the Wagyu Beef

    Heat a grill or skillet over high heat. Add the Wagyu beef and cook for about 3-4 minutes on one side, then flip and cook for another 2-3 minutes for medium-rare, or until desired doneness. During the last minute of cooking, brush the apricot yakitori glaze over the beef.

    Serve

    Remove the beef from heat and let it rest for a couple of minutes. Slice the Wagyu beef and drizzle with any remaining yakitori glaze. Garnish with chopped green onions before serving.
