    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Season the Berkshire pork belly with salt and black pepper. Place it in a baking dish and cover with foil. Bake for 2-3 hours until the meat is tender.

    Pickle the Carrots

    Julienne the carrots and place them in a bowl. In a separate bowl, mix rice vinegar, sugar, and a pinch of salt. Pour this mixture over the carrots and let it marinate for at least 30 minutes.

    Prepare the Cucumber

    Thinly slice the cucumber and set aside.

    Assemble the Banh Mi

    Once the pork is done, let it rest for a few minutes before slicing it thinly. Cut the baguette in half lengthwise. Spread mayonnaise on both sides, layer the sliced pork, pickled carrots, cucumber slices, and fresh cilantro.

    Drizzle soy sauce over the assembled sandwich, close it up, and enjoy!
