Prepare the Filling
In a mixing bowl, combine the chopped shiitake mushrooms, cooked jasmine rice, soy sauce, sesame oil, green onions, minced garlic, minced ginger, salt, and pepper. Mix well until all ingredients are combined.

Assemble the Shumai
Place a wonton wrapper in the palm of your hand. Spoon about 1 tablespoon of the filling into the center of the wrapper. Gather the edges of the wrapper around the filling, pinching to create a cup shape. Repeat with the remaining wrappers and filling.

Steam the Shumai
Prepare a steamer basket lined with parchment paper. Place the shumai in the steamer, making sure they are not touching. Steam over boiling water for about 15 minutes, or until the filling is heated through.

Serve
Remove the shumai from the steamer and serve hot with additional soy sauce for dipping.
