Prepare the Filling
In a mixing bowl, combine the cooked boudin sausage (removed from casing), pepper jack cheese, chopped green onions, and minced garlic. Mix well until all ingredients are fully combined.

Assemble the Eggrolls
Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water to help seal the edges.

Fry the Eggrolls
In a deep skillet or frying pan, heat the oil to 350°F (175°C). Fry the eggrolls in batches, about 3-4 at a time, until they are golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve with Pepper Jelly Sauce
Serve the hot pepperjack boudin eggrolls with pepper jelly dipping sauce on the side.
