Prepare the Fish
Place the catfish fillets in a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes in the refrigerator.

Mix Dry Ingredients
In a separate bowl, combine the cornmeal, flour, cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Remove the catfish from the buttermilk, letting the excess drain off. Dredge each fillet in the cornmeal mixture, ensuring they are well-coated.

Fry the Fish
Carefully place the fillets in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fried catfish from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with tartar and cocktail sauce on the side.
