Cook the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken
Pat the chicken breasts dry and rub them with blackening seasoning, salt, and pepper.

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and blackened. Remove from skillet and let rest.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers, and sauté for about 4-5 minutes until they are soft. Stir in the diced tomatoes and cook for another 2 minutes.

Combine
Slice the blackened chicken and add it back to the skillet with the vegetables. Toss in the cooked penne pasta and mix everything together. Cook for an additional minute to heat through.

Garnish and Serve
Remove from heat, garnish with chopped parsley, and serve warm.
