Preparation

  1. 1

    Cook the Capellini

In a large pot of boiling salted water, cook the capellini according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Giardiniera

If not using store-bought, finely chop your homemade giardiniera and set aside.

Cooking

  1. 3

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, and sauté for about 1 minute until fragrant.

  2. 4

    Add the Shrimp

Add the shrimp to the skillet. Season with salt and black pepper. Cook for about 3-4 minutes, or until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.

  3. 5

    Make the Sauce

In the same skillet, pour in the marinara sauce and bring it to a simmer. Stir in the heavy cream and chopped giardiniera, mixing well. Let it cook for about 5 minutes until slightly thickened.

  4. 6

    Combine Ingredients

Return the cooked shrimp to the skillet and add the grated Parmesan cheese. Stir until the cheese is melted and everything is well combined.

Serving

  1. 7

    Plate the Dish

Serve the creamy shrimp mixture over the cooked capellini. Garnish with chopped fresh parsley and additional Parmesan cheese if desired.
