Cooking the Pasta

Boil Water
In a large pot, bring 4 to 5 liters of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook Spaghetti
Add 400 grams of spaghetti to the boiling water. Cook according to package instructions, usually 8 to 10 minutes, until al dente.

Drain Pasta
Once cooked, drain the spaghetti in a colander and set aside, reserving a cup of pasta water for later use.

Sauté Garlic
Add 4 minced garlic cloves to the oil and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Add Tomatoes and Seasonings
Stir in 800 grams of crushed tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Bring the sauce to a simmer.

Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Add the drained spaghetti to the sauce in the saucepan. Toss to combine, adding reserved pasta water a little at a time if the sauce is too thick.
