Italian Beef Preparation

Sear the Beef
Heat olive oil in a large skillet over medium-high heat. Season the beef roast with salt, black pepper, and Italian seasoning. Sear the beef on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.

Combine Ingredients in Slow Cooker
Transfer the sautéed vegetables to a slow cooker. Place the seared beef on top of the vegetables. Pour in the beef broth and sprinkle the dried oregano over everything.

Cook the Beef
Cover and cook on low for 6-8 hours or until the beef is tender and easily shredded with a fork.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker, mixing it with the juices and vegetables.

Add Cheese
Top the beef mixture with shredded mozzarella cheese. Cover and allow to melt for about 10 minutes on low heat.

Prepare the Broth
In a saucepan, combine 2 cups of beef broth, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Bring to a simmer over medium heat and adjust seasoning to taste.
