Method

Cooking the Pasta

  1. 1

    Boil the Linguine

In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.

Preparing the Sauce

  1. 2

    Make Garlic Butter

In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

  2. 3

    Add Vegetables

Add the sliced mushrooms, diced carrots, and peas to the skillet. Sauté for 3-5 minutes until the vegetables are tender.

  3. 4

    Incorporate Clams

Stir in the chopped clams and cook for an additional 2-3 minutes until heated through.

  4. 5

    Finish with Spinach

Add the chopped spinach to the skillet and cook until wilted, about 1-2 minutes.

Combining Ingredients

  1. 6

    Combine Pasta and Sauce

Add the drained linguine to the skillet, tossing it with the sauce. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.

  2. 7

    Season

Season with salt and black pepper to taste. Mix in the grated Parmesan cheese, tossing to combine.

Serving

  1. 8

    Plate the Dish

Serve immediately, garnishing with extra Parmesan cheese and a sprinkle of red pepper flakes if desired.
