Method

Prepare the Clams

  1. 1

    Clean the Clams

Rinse the fresh clams under cold water to remove any sand or grit. Soak them in a bowl of fresh water for 20 minutes to help purge any remaining sand.

Cook the Pasta

  1. 2

    Boil the Linguine

In a large pot, bring water to a boil. Add a generous pinch of salt and then add the linguine. Cook according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of pasta water, then drain the linguine and set aside.

Prepare the Sauce

  1. 3

    Sauté Garlic

In a large skillet, heat the olive oil over medium heat. Add minced garlic (from 4 cloves) and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  2. 4

    Add Clams and Wine

Add the cleaned clams to the skillet and pour in the white wine. Cover the skillet and cook for about 5-7 minutes until the clams open. Discard any clams that do not open.

  3. 5

    Season the Sauce

Once the clams are open, add red pepper flakes, salt, and black pepper. Stir to combine and cook for an additional 2 minutes.

  4. 6

    Combine with Pasta

Add the cooked linguine to the skillet with the clam sauce. Toss everything together, adding reserved pasta water a little at a time to achieve the desired sauce consistency.

  5. 7

    Finish with Parsley

Chop the fresh parsley and sprinkle it over the pasta. Toss again to combine and remove from heat.

Serve

  1. 8

    Plate the Dish

Serve the linguine and clams hot, garnished with additional parsley if desired.
