Meatballs

Method

Meatballs

  1. 1

    Prepare the Meatball Mixture

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, minced garlic, egg, salt, black pepper, and Italian seasoning.

  2. 2

    Form the Meatballs

Using your hands, mix the ingredients until just combined. Form the mixture into small meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet.

  3. 3

    Bake the Meatballs

Preheat your oven to 400°F (200°C). Bake the meatballs in the preheated oven for 20 minutes, or until they are cooked through and browned.

Soup Base

  1. 4

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion and carrots, and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.

  2. 5

    Add the Broth and Tomatoes

Pour in the chicken broth and add the canned diced tomatoes (with their juice) to the pot. Bring to a boil.

  3. 6

    Cook the Pasta

Once boiling, add the pasta to the pot and reduce the heat to a simmer. Cook according to the package instructions until al dente.

  4. 7

    Add the Spinach and Meatballs

Stir in the chopped spinach and add the baked meatballs to the soup. Cook for another 5 minutes until the spinach is wilted and everything is heated through.

  5. 8

    Season the Soup

Taste the soup and season with salt, black pepper, and Italian seasoning as needed.
