    Cook the Tortellini

    In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

    Prepare the Vegetables

    While the tortellini is cooking, slice the mushrooms and mince the garlic. Set aside.

    Prepare the Roasted Red Peppers

    If using jarred roasted red peppers, drain and chop them into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

    Add Mushrooms and Spinach

    Add the sliced mushrooms to the skillet and sauté for 3-4 minutes until they soften. Then, add the fresh spinach and cook until wilted, about 2 minutes.

    Combine Ingredients

    Add the roasted red peppers to the skillet along with the cooked tortellini. Toss everything together gently.

    Finish with Butter and Seasoning

    Add the remaining 2 tablespoons of butter to the skillet and stir until melted. Season with salt and black pepper to taste. Cook for an additional 2 minutes, stirring occasionally.
