Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, salt, and cocoa powder. Mix until well combined.

Add Wet Ingredients
Make a well in the center of the dry ingredients and add the egg yolks, white wine (or vinegar), and melted unsalted butter. Mix until the dough starts to come together.

Knead the Dough
Gradually add water, a tablespoon at a time, until the dough is smooth and elastic. Knead the dough for about 5 minutes, then wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
After resting, roll out the dough on a lightly floured surface to about 1/8-inch thickness.

Cut and Shape the Shells
Cut the dough into 4-inch circles. Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

Fry the Shells
Heat vegetable oil in a deep pot to 350°F (175°C). Fry the wrapped tubes until golden brown, about 2-3 minutes. Remove and drain on paper towels. Carefully remove the tubes once cooled.

Prepare the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Add Chocolate Chips
Fold in the mini chocolate chips and chopped pistachios (if using) until evenly distributed.

Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta mixture. Be generous with the filling!
