Boil the Pasta
In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.
Cooking Sausage and Vegetables

Cook the Sausage
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced Italian sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the diced onion and chopped Mancini peppers. Sauté for about 5 minutes until softened.
Making the Creamy Sauce

Add Garlic and Cream
Add the minced garlic to the sautéed vegetables and cook for an additional minute. Pour in the heavy cream, stirring to combine.

Season the Sauce
Add the Cajun seasoning, salt, and black pepper to the cream mixture. Stir well and let it simmer for about 5 minutes until slightly thickened.

Combine Ingredients
Return the cooked sausage to the skillet and add the drained rigatoni. Toss everything together until the pasta is well coated with the sauce.

Finish with Parmesan
Remove from heat and mix in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.

Serve the Cajun rigatoni and sausage hot, garnished with additional Parmesan cheese if desired.
