Method

Cooking Pasta

  1. 1

    Boil the Pasta

In a large pot, bring water to a boil. Add the salt and the rigatoni pasta. Cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Preparing Sausage and Vegetables

  1. 2

    Sauté Sausage

In a large skillet over medium heat, add the olive oil. Once hot, add the Andouille sausage, sliced into rounds. Sauté for about 5-7 minutes until browned.

  2. 3

    Add Vegetables

Add the diced bell pepper, onion, and minced garlic to the skillet with the sausage. Cook for an additional 5 minutes, stirring occasionally until the vegetables are softened.

  3. 4

    Season with Cajun Spice

Sprinkle the Cajun seasoning over the sausage and vegetable mixture. Stir well to combine and cook for 2 more minutes.

Making the Sauce

  1. 5

    Add Tomatoes and Cream

Pour in the crushed tomatoes and heavy cream into the skillet. Stir until well combined, and bring to a gentle simmer. Cook for about 5 minutes, allowing the sauce to thicken slightly.

  2. 6

    Add Cheese and Season

Stir in the grated Parmesan cheese and black pepper. Mix until the cheese is melted and the sauce is creamy.

Combining and Serving

  1. 7

    Combine Pasta with Sauce

Add the cooked rigatoni to the skillet with the sauce and gently toss to coat the pasta evenly with the sauce.

  2. 8

    Garnish and Serve

Remove from heat and garnish with chopped fresh parsley. Serve hot and enjoy your Cajun Rigatoni & Sausage!
