Breadstick Dough

Method

Making the Dough

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (1.5 cups) and granulated sugar (1 tbsp). Sprinkle the active dry yeast (2 tsp) over the top, stir gently, and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Prepare the Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Pour in the activated yeast mixture and olive oil (2 tbsp). Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a lightly floured surface. Knead for about 5-7 minutes until the dough is smooth and elastic.

  4. 4

    Let the Dough Rise

Place the kneaded dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Assembling the Bosco Sticks

  1. 5

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 6

    Shape the Dough

Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle about 1/4 inch thick.

  3. 7

    Add the Filling

Sprinkle the shredded mozzarella cheese (2 cups) over half of the dough. Fold the other half over and press the edges to seal.

  4. 8

    Cut the Sticks

Using a pizza cutter or knife, cut the filled dough into strips about 1 inch wide.

  5. 9

    Bake the Bosco Sticks

Place the breadsticks on a baking sheet lined with parchment paper, ensuring they are spaced apart. Bake in the preheated oven for 15-20 minutes or until golden brown.

Making Sauces

  1. 10

    Prepare Garlic Butter

In a small bowl, combine melted unsalted butter (1 cup) and minced garlic (2 tbsp). Mix well and set aside.

  2. 11

    Prepare Other Sauces

For the marinara sauce, use store-bought or homemade. For cheddar cheese sauce, melt cheddar cheese with a little cream or milk over low heat until smooth.
