Preparing the Custard

    Heat the Cream

    In a medium saucepan, pour the heavy cream and split the vanilla bean lengthwise. Scrape the seeds into the cream and add the bean pod as well. Heat the mixture over medium heat until it just begins to simmer. Remove from heat and let it steep for 15 minutes.

    Whisk the Egg Yolks

    In a large mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is smooth and pale in color.

    Combine and Strain

    Gradually pour the warm cream mixture into the egg yolk mixture while continuously whisking to prevent the eggs from cooking. Then, strain the mixture through a fine-mesh sieve into another bowl to remove the vanilla pod and any coagulated bits.

Baking the Crème Brûlée

    Prepare the Ramekins

    Preheat your oven to 325°F (163°C). Place 6 ramekins in a baking dish. Pour the custard mixture into the ramekins evenly.

    Bake in a Water Bath

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

    Cool Down

    Remove the ramekins from the water bath and let them cool to room temperature. Then cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Caramelizing the Sugar

    Prepare for Caramelizing

    Once the custards are chilled, sprinkle about 1 teaspoon of granulated sugar evenly over the surface of each custard.

    Caramelize the Sugar

    Using a kitchen torch, carefully caramelize the sugar until it melts and forms a crispy, golden layer. If you don't have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.
