Wine Preparation

Harvest Grapes
Harvest 2 tons of grapes from the Monarch Mine Vineyard at optimal ripeness. Ensure to remove any leaves or debris.

Crush and Press
Crush the harvested grapes in a clean fermentation vessel. Press the crushed grapes to separate the juice from the skins.

Add Yeast
Rehydrate the packet of yeast in warm water for 15 minutes. Add it to the grape juice and stir well to incorporate.

Add Sulfites
Measure and add 50 mg/L of sulfites to the grape juice to prevent unwanted microbial growth.

Fermentation
Cover the fermentation vessel with a lid and airlock. Allow the fermentation to occur for 1-2 weeks at a controlled temperature of around 70°F (21°C).

Malolactic Fermentation
After primary fermentation, add the malolactic bacteria to the wine. Allow for a secondary fermentation for an additional 2-4 weeks.

Add Oak Chips
After malolactic fermentation is complete, add 100 grams of medium toast oak chips to the wine for flavor enhancement.

Racking
After aging for 3-6 months, rack the wine by siphoning it off from the sediment into a clean vessel.

Bottling
Sanitize the bottles and cork stoppers. Fill each bottle with wine leaving a small headspace, then cork them securely.

Labeling
Label each bottle with the wine name, vintage year, and vineyard information. Store bottles upright for a few days and then lay them horizontally for aging.
