Prepare the Grits
In a saucepan, bring 4 cups of water to a boil. Add Adluh grits and a pinch of salt. Reduce heat to low and cook, stirring frequently, until thickened, about 20-25 minutes. Stir in half of the Parmesan cheese and set aside.

Sauté the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add chopped pork prosciutto and cook until crispy, about 3-4 minutes. Add the shrimp and sauté until they turn pink, about 3-4 minutes. Season with salt and black pepper.

Add Vegetables and Broth
Stir in the blistered tomatoes, roasted red peppers, asparagus, and lobster broth. Bring to a simmer and cook until asparagus is tender, about 5-7 minutes.

Combine and Serve
To serve, spoon the grits into bowls, top with the shrimp and vegetable mixture. Garnish with sliced scallions and the remaining Parmesan cheese.
