Braised Pork Cheeks Preparation

    Brining Pork Cheeks

    In a bowl, combine Cholula hot sauce and water. Add pork cheeks and let them brine in the refrigerator for at least 2 hours or overnight.

    Braising Pork Cheeks

    Preheat oven to 300°F (150°C). In a large Dutch oven, heat a little oil over medium heat. Add onion, garlic, carrots, and celery, sautéing until soft. Add the brined pork cheeks and sear until browned. Pour in beef broth, add bay leaves and black peppercorns. Bring to a simmer, cover, and transfer to the oven. Braise for about 3 hours or until tender.

    Making Potato Croquettes

    Boil the cubed potatoes until tender, then drain and mash. Allow to cool, then mix in salt, beaten eggs, and form into small croquettes. Dredge in flour, dip in egg, and coat with breadcrumbs. Heat oil in a frying pan and fry the croquettes until golden brown.

    Glazing and Serving

    Once the pork cheeks are tender, remove them from the oven and brush with BBQ sauce. Return to the oven for an additional 15 minutes. Serve the braised pork cheeks alongside potato croquettes and garnish with watermelon radish slices.
