    Prepare the Mashed Potatoes

    Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mix in the Flavorings

    Add the butter, minced shallots, and grated Parmesan cheese to the potatoes. Mash until smooth, adding salt and pepper to taste.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 4-5 minutes on each side for medium-rare. Let rest.

    Grill the Asparagus

    Toss asparagus with olive oil, salt, and pepper. Grill on medium-high heat for 5-7 minutes until tender and slightly charred.

    Make the Red Wine Demi-Glace

    In the same skillet used for the steaks, add red wine and beef stock. Bring to a boil and reduce heat to simmer until thickened, about 10-15 minutes. Stir in fresh thyme.

    Serve

    Plate the filet mignon alongside the Parmesan & shallot mashed potatoes and grilled asparagus. Drizzle the red wine demi-glace over the steak.
