    Sear the Lamb

    Heat olive oil in a large, heavy pot over medium-high heat. Season the lamb shanks with salt and pepper, then sear them in the hot oil until browned on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add diced onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer for about 5 minutes to reduce slightly.

    Add Broth and Herbs

    Add the beef broth, thyme, and bay leaves to the pot. Return the lamb shanks to the pot, ensuring they are submerged in the liquid.

    Braise the Lamb

    Cover the pot and reduce the heat to low. Let it simmer gently for 2-3 hours, or until the lamb is tender and falling off the bone.
