Prepare the Tomato Coating
In a shallow bowl, mix the cornmeal, flour, salt, and black pepper. In another bowl, beat the eggs.

Slice the Tomatoes
Slice the green tomatoes into 1/2 inch thick slices.

Fry the Tomatoes
Heat olive oil in a large skillet over medium heat. Fry the coated tomatoes in batches until golden brown, about 3-4 minutes per side. Place on a paper towel-lined plate to drain.

Make the Pimento Cheese
In a mixing bowl, combine the smoked cheddar, gouda, cream cheese, and mayonnaise. Mix until well combined.

Make the Dijon Honey Mustard
In a small bowl, whisk together the Dijon mustard and honey.

Prepare the Fresh Herb Puree
Blend the fresh herbs with a little olive oil until smooth. Season with salt and pepper to taste.
