Prepare the Ingredients
Rinse the Carolina Gold rice under cold water until the water runs clear. Drain and set aside. Rinse the small red beans and soak them in water for at least 4 hours or overnight, then drain.

Cook the Beans
Add the soaked and drained small red beans to the pot along with the coconut milk, water, thyme, salt, and black pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, or until the beans are tender.

Add Rice
Once the beans are tender, stir in the rinsed Carolina Gold rice. Cover the pot and cook for an additional 20 minutes, or until the rice is cooked and has absorbed the liquid.

Serve
Remove from heat and let it sit covered for 5 minutes. Fluff the rice and beans with a fork before serving. Adjust seasoning if necessary.
