Chowder Preparation

    Prepare the Vegetables

    Peel and dice the potatoes, chop the onion, celery, and carrots, and mince the garlic.

    Cook the Vegetables

    In a large pot, melt the butter over medium heat. Add the onion, celery, carrots, and garlic. Sauté until the vegetables are soft, about 5 minutes.

    Add Potatoes and Broth

    Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the potatoes are tender.

    Add Smoked Haddock

    Add the smoked haddock fillets to the pot and cook for another 5-7 minutes, until the fish is cooked through.

    Stir in Cream and Season

    Stir in the heavy cream, salt, and black pepper. Cook for an additional 2-3 minutes to heat through.

    Garnish and Serve

    Remove from heat, stir in fresh parsley, and serve hot.
