Prepare the Onion
Preheat the oven to 375°F (190°C). Cut the top off the onion and carefully scoop out the center layers, leaving a shell.

Make the Filling
In a bowl, mix the cream cheese, cheddar cheese, cooked bacon, chives, garlic powder, and paprika until well combined.

Stuff the Onion
Fill the onion shell with the cheese mixture. Place the stuffed onion on a baking sheet and bake for 30-35 minutes until the onion is tender and the filling is bubbly.

Prepare the Potatoes
Wash and cut the russet potatoes into thick wedges. Soak them in water for 30 minutes to remove excess starch, then drain and pat dry.

Season and Cook the Fries
Toss the potato wedges with olive oil, salt, black pepper, garlic powder, and paprika. Spread them out on a baking sheet in a single layer. Bake at 425°F (220°C) for 25-30 minutes, turning halfway through, until golden and crispy.
