Marinate the Chicken
In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 1 hour or overnight.

In another bowl, mix the flour, salt, paprika, garlic powder, onion powder, and black pepper.

Fry the Chicken
Heat oil in a large skillet over medium-high heat. Remove chicken from the marinade, letting excess drip off, and dredge in the flour mixture. Fry the chicken in hot oil until golden brown and cooked through, about 12-15 minutes per side. Drain on paper towels.

Peel and chop the potatoes into large chunks. Boil in salted water until tender, about 15-20 minutes.

In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped collard greens and vegetable broth. Season with salt and pepper. Cover and simmer until greens are tender, about 20-25 minutes.
