Fried Chicken

    Marinate the Chicken

    In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 1 hour or overnight.

    Prepare the Dredge

    In another bowl, mix the flour, salt, paprika, garlic powder, onion powder, and black pepper.

    Fry the Chicken

    Heat oil in a large skillet over medium-high heat. Remove chicken from the marinade, letting excess drip off, and dredge in the flour mixture. Fry the chicken in hot oil until golden brown and cooked through, about 12-15 minutes per side. Drain on paper towels.

Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into large chunks. Boil in salted water until tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Collard Greens

    In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped collard greens and vegetable broth. Season with salt and pepper. Cover and simmer until greens are tender, about 20-25 minutes.

Cornbread

    Preheat oven to 400°F (200°C). In a bowl, mix cornmeal, flour, baking powder, salt, and sugar. In another bowl, whisk together milk, egg, and melted butter. Combine wet and dry ingredients until just mixed.

    Pour the batter into a greased 8-inch square baking dish. Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
