Prepare the Lentils
In a saucepan, combine green lentils, vegetable broth, minced garlic, and bay leaf. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until lentils are tender. Remove bay leaf and set aside.

Roast the Cod
Preheat the oven to 400°F (200°C). In a bowl, mix dark rum, maple syrup, olive oil, salt, and black pepper. Place cod fillets on a baking sheet and brush the rum-maple mixture over the top. Roast in the oven for 15-20 minutes, or until the fish flakes easily with a fork.

Combine and Serve
In a large bowl, combine cooked lentils, boiled celeriac, frozen peas, and chopped parsley. Toss to mix. Serve the roasted cod on top of the lentil mixture.
