    Prepare the Vegetables

    Preheat your charcoal grill. Peel and chop the beets, carrots, and celeriac into uniform sizes for even cooking. Toss them in a bowl with olive oil, salt, black pepper, and fresh thyme if desired.

    Make the Granola

    In a separate bowl, combine sunflower seeds, oats, honey or maple syrup, coconut oil, and a pinch of salt. Mix well until the oats and seeds are evenly coated.

    Grill the Vegetables

    Place the seasoned vegetables in a grill basket and roast them on the charcoal grill for about 20-25 minutes, turning occasionally until they are tender and slightly charred.

    Toast the Granola

    While the vegetables are grilling, spread the granola mixture on a baking sheet and toast it on the grill for about 10 minutes, stirring halfway through, until golden brown.

Serving

    Combine and Serve

    Once the veggies are grilled and the granola is toasted, remove them from the grill. Serve the roasted vegetables topped with the sunflower granola for added crunch.
