    Prepare the Blackened Flounder

    Pat the flounder fillets dry with paper towels. Rub the blackening seasoning evenly over both sides of each fillet.

    Cook the Flounder

    In a skillet, heat olive oil over medium-high heat. Once hot, add the flounder fillets and cook for 3-4 minutes on each side until blackened and cooked through. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until soft. Then add spinach and cook until wilted. Season with salt and pepper to taste.

    Prepare the Plantains

    In another skillet, add olive oil and heat over medium heat. Fry the sliced plantains for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

    Assemble the Dish

    On a plate, serve a portion of cooked rice and black beans. Top with the sautéed vegetables, blackened flounder, sliced avocado, and fried plantains. Drizzle with salsa before serving.
