Prepare the Chicken

In a bowl, mix olive oil, garlic powder, cumin, chili powder, salt, and black pepper. Add the chicken breasts and coat them evenly with the spice mixture. Let marinate for at least 30 minutes.

Char the Jalapeños

Preheat a grill or skillet over medium-high heat. Place the whole jalapeños on the grill and char them for about 5-7 minutes, turning occasionally until the skin is blistered. Remove and set aside.

Cook the Chicken

In the same skillet or grill, add the marinated chicken breasts. Cook for about 6-7 minutes on each side or until cooked through and no longer pink in the center. Remove from heat, let rest for a few minutes, then slice into strips.

Sauté the Vegetables

In the same skillet, add sliced bell peppers and onions. Sauté for about 5-6 minutes until the vegetables are tender and slightly charred.

Assemble the Fajitas

Warm the flour tortillas in a separate skillet or microwave. On each tortilla, layer the sliced chicken, sautéed vegetables, and crumbled Oaxaca cheese. Slice the charred jalapeños and add them on top.

Serve

Wrap the tortillas and serve with your favorite sides like guacamole, salsa, or sour cream.
