Prepare the Pork
In a bowl, mix the pork shoulder with coffee grounds, chili powder, salt, and pepper. Let it marinate for at least 30 minutes.

Prepare Sweet Potato
Peel and dice the sweet potato into small cubes. Boil or steam until tender, about 10-15 minutes, then mash lightly.

Make the Sauce
In the same skillet, add chopped onion and minced garlic, sautéing until golden. Add tomato sauce and simmer for 5 minutes, seasoning with salt and pepper.

Assemble the Quesadilla
On a tortilla, layer the cooked pork, mashed sweet potato, a generous amount of Oaxaca cheese, and a spoonful of the chile tomato sauce. Top with another tortilla.

Cook the Quesadilla
Heat a skillet over medium heat. Cook the quesadilla on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.

Cut into wedges and serve hot with extra chile tomato sauce on the side.
