    Make the Ravioli Dough

    In a large bowl, combine the flour and salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix the ricotta cheese, Grana Padano, salt, and pepper until well combined.

    Roll Out the Dough

    Divide the rested dough into four portions. Roll out each portion into thin sheets using a pasta machine or a rolling pin. The sheets should be thin enough to see your hand through.

    Fill the Ravioli

    Place small mounds of the ricotta filling about 1 inch apart on one sheet of dough. Moisten the edges with water, then fold the dough over to create pockets. Press to seal and cut out individual ravioli.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli for about 3-4 minutes until they float to the surface. Remove with a slotted spoon.

    Make the Red Sauce

    In a saucepan, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until soft. Add crushed tomatoes, oregano, salt, and pepper. Simmer for 15 minutes. Stir in fresh basil before serving.

    Serve

    Plate the cooked ravioli, ladle the red sauce over the top, and sprinkle with additional Grana Padano.
