Prepare the Chicken
Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.

Batter the Chicken
In a shallow dish, combine flour, salt, and pepper. In another dish, beat the eggs. Dip each chicken breast first in the flour, then in the egg, and back in the flour.

Cook the Chicken
Heat olive oil in a large skillet over medium-high heat. Add the battered chicken and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Make the Sauce
In the same skillet, add butter and minced garlic, sauté for about 1 minute. Add chicken broth and lemon juice, stirring to combine. Bring to a simmer.

Finish the Dish
Return the chicken to the skillet, coating it in the sauce. Let it simmer for another 2-3 minutes. Sprinkle with fresh parsley before serving.
